Ingredients
3 cups of red lentils
1 finely diced onion
2 diced carrots
2 sliced celery sticks (optional)
2 diced potatoes
1.5L Veg or chicken stock (using stock cubes is fine)
Season to taste with Salt & Pepper
Method:
Place all ingredients into a large saucepan and bring to the boil – stirring occasionally.
Reduce & partially cover on a low simmer for 45mins – stirring occasionally.
I highly recommend you serve with thick-cut Merchant & Maker’s 5 seed bread & butter!
Feel free to add extra veg like sweet potato and parsnip.
